5-Layer Peanut Butter, Jam and Pistachio Apple Crumble Pie

Ingredients
  • FILLING:
  • 5 apples, peeled
  • ½ cup natural crunchy peanut butter
  • ½ cup coconut sugar
  • ½ cup raspberry jam
  • ½ cup mini dark chocolate chips, and / or ¼ cup shelled pistachios (optional)
  • CRUMBLE TOPPING:
  • ½ cup coconut sugar
  • ¾ cup quick cooking oats
  • ¼ cup quinoa flour (sub with any flour of your choice)
  • ¼ t salt
  • ¼ cup soft coconut oil
Instructions
  1. APPLE PREP:
  2. Peel apples and cut each into this slices
  3. Place slices in a single layer in a heated pan with a drizzle of coconut oil and 1 Tablespoon cinnamon.
  4. Bake on low heat until apples are soft. Take out pan and set aside.
  5. CRUST:
  6. Prepare a crust of your choice for this pie, or use our recipe linked above.
  7. FILLING:
  8. Mix the peanut butter with the coconut sugar to combine (feel free to lower or omit the sugar for a thinner layer on top of crust.) Spread mixture onto your cooled crust.
  9. Top peanut butter layer with the raspberry jam
  10. Top jam layer with shelled pistachios or chocolate chips if using (great for crunch!)
  11. Finally, once other layers are in your pie dish, place the apple slices in to cover evenly
  12. LAYER 5: CRUMBLE TOPPING
  13. Mix all the dry crumble topping ingredients in a bowl, then add the soft coconut oil.
  14. Mix with fork until crumbly, then spread evenly and press onto pie on top of apples
  15. Bake at 350 degrees for 35 - 40 minutes. Be careful not to burn, as the coconut sugar burns more quickly than other sugars.
