Banana Split Pancakes, and a Pancake Round Up

Finally, a reason has come for me to really show off my pancake obsession. Did I need a reason?  Not really. I know it’s been present, but I don’t know if there’s been an all out crazy pancake post like this one before.

The National Post has started this program where each week you are given a different challenge, called Gastropost.  This is the first week I am participating. This week’s challenge?  Pick your favourite food and eat it.  This morning I had lemon ricotta pancakes.

I knew my favourite was breakfast, but it’s hard to narrow it down.  Pancakes or french toast.  Crepes.  Blintzes.  Smoothies.  Breakfast bread puddings.  I thought I nailed it: cheesecake stuffed french toast. That way I’d get to sneak cheesecake into the mix of favourite foods!  I even made some yesterday for this purpose.

It was wonderful.  But then when I sat down to write this, I knew I couldn’t post it without talking about pancakes.  And the more I started thinking about pancakes…and editing photos of pancakes, the more I knew that really, my favourite food has got to be pancakes.

Pancakes were actually one of the first “unhealthy” foods that I made-over in a healthy way.  When I started to eat a cleaner diet, I used to eat these egg white oatmeal pancakes every single day.  My pancakes have since evolved, and I’ve even successfully snuck in spinach–even into pancakes that aren’t savory!  Really, there are some weeks where I eat pancakes every day for breakfast.  They just never get old.  So as much as I was going to share this cheesecake stuffed french toast with you today, I’m now declaring pancakes to be my favourite food.  Here’s a small sampling of some of my favourite pancake recipes, before  I share my new one with you.

I’m getting hungry just looking at this list.  Since I can’t link that big image, here is each recipe: double dark chocolate pancakes with salted peanut syrup,  peanut butter pancakes with raspberry filling, mint coconut pancakes , carrot cake pancakes, chocolate raspberry pancakes, egg nog pancakes.  

I believe you can take any flavour combination you like and turn it into the perfect pair of pancake and syrup/sauce/topping.  Though I haven’t included any savory pancakes here, they are definitely a winner as well.  I’ve had lots of savory spinach pancakes.  Plantain pancakes are great, as they’re got that sweet/savory perfect balance. What’s also amazing is cornbread pancakes topped with caramelized onions, bacon, and a poached egg.

Essentially, I could talk all day about pancakes the way Bubba talked about shrimp in Forrest Gump.  Really.  If I haven’t owned a pancake house in a past life, it’s sure to happen in this one.  Did I mention that all these recipes are healthy? I think that’s pretty easy to forget when you’re thinking about how delicious they are.  

Now it’s time for one more addition to my growing list of pancake recipes: banana split pancakes.

Banana pancakes with chocolate chips, layered with peanut butter syrup and strawberries.  If you wanted to get really crazy you could make it a “true” banana split and top it with frozen yogurt..which would be a little less wacky if you did that as a dessert.  And really, why not have pancakes for dessert?  If you wanted, you could also make a ricotta cream filling…or some creamy vanilla sauce (mix some greek yogurt and vanilla protein powder and voila!).

Banana Split Pancakes, and a Pancake Round Up
Recipe type: Breakfast, dessert

Serves: 2
  • 1 ripe banana
  • ½ cup milk (I used almond)
  • 2 eggs
  • 1 T oil (I used coconut), plus a little more for greasing pan.
  • 2 T ground flax seeds (replace with chia or flour if desired)
  • ⅓ cup quinoa flakes (replace with oats or flour if you don't have any)
  • ⅓ cup + 4 T flour (I used spelt)
  • 1 t baking powder
  • 2 T chocolate chips
  • SYRUP:
  • equal part maple syrup and peanut butter, pinch sea salt (if using unsalted peanut butter)
  • 1 cup strawberries, sliced
  1. Preheat your pan, and add a little oil.
  2. Blend together banana, oil, eggs and milk (I used a magic bullet to get it nice and smooth).
  3. In a separate bowl, stir together dry ingredients.
  4. Pour wet over dry, and whisk.
  5. Fold in chocolate chips.
  6. Ladle batter onto pan, and flip when a few bubbles form, and edges begin to get solid.
  7. FOR SYRUP simply stir together equal amounts of syrup and peanut butter.
