
I love orange zest! It’s so flavourful, delicious and refreshing. It make a nice zingy glaze for these guys.
I wanted a doughnut pan for quite some time. It was one of those funny things–where you hint that you’d like something so many times that your boyfriend thinks you own it already. I think that’s some form of selective hearing.
It was one of those items I wanted but didn’t think I needed, what with all the various muffin pans I had. But trust me, it’s worth getting a doughnut pan. More rationalizing to come.
About a month ago, we went to a Kitchen Stuff Plus warehouse sale where I was hoping to buy said doughnut pan, but alas there were none there. So I decided it was time to splurge! Off we went to the normal Kitchen Stuff Plus after the warehouse to pick up a pan. It was pouring. That kind of rain that feels like it’s coming up from below you and sideways like he describes in Forest Gump. We walk everywhere because we live downtown. Walking and running in the rain. That’s how bad I was needing to make doughnuts.
Home we arrived. And I made my first batch of orange doughnuts.
Except there was only one problem: we’d only bought one pan. The next day, we bought doughnut pan #2. What’s so great is that with a doughnut pan, you’ve got fresh donuts in 15 minutes from start to finish including baking time. That’s why I now think doughnuts are superior to muffins. And they’re just fun. And I like the perfect shape. I am still a little surprised at how happy I am with these pans. This rivals the great food processor purchase of 2011.
Onto the recipe! Don’t worry, if you don’t have a doughnut pan, you can use a muffin pan. (I know, after all that talk 😎 )
- DOUGH:
- 2 c sifted flour (I used spelt)
- 2 t baking powder
- 2 eggs
- 1 T stevia powder
- zest of 1 orange
- ½ cup milk (I used almond)
- ¼ cup yogurt (I used plain organic)
- coconut oil for greasing
- GLAZE:
- 1 cup orange juice
- 4T yogurt
- 2T honey
- OPTIONAL: flaked coconut for topping
- Preheat oven to 425
- Whisk together wet dough ingredients
- Add dry dough ingredients
- Grease pans, pour dough/spread evenly in pans
- Bake 9-11 minutes
- MEANWHILE
- Whisk together glaze ingredients, and bring to a simmer in a saucepan, let it reduce until it begins to get sticky
- Transfer to a bowl to cool, allow donuts to cool when ready
- Dip doughnuts into glaze, and place on drying rack
- ENJOY
