Who doesn’t love pizza? Who doesn’t love summer? Chocolate? Watermelon?!!

Today is a beautiful summer day, and today is the day we combine many of these amazing things together. We eat ours cold from the fridge but you could even freeze this to get more of a popsicle vibe.


While you could definitely melt any chocolate on hand to use for the topping, we whipped up some raw chocolate. I love the flavour of our raw homemade chocolate – it’s sinful, rich but also somehow very clean and refreshing tasting.

We’ve used this for our chocolate base (increase as needed depending on how much watermelon you are using):

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/3 cup raw cacao powder
  • pinch of sea salt

Melt the ingredients and blend (you may want to use a high powered blender, but not necessary). We pour the chocolate on top of cold watermelon, and top immediately with goji berries and coconut smiles (or whatever toppings you’d like!). The coconut oil is very temperature sensitive and will start to harden pretty quickly, so have the toppings ready to go, and be prepared to work fast!

Watermelon is an amazing source of lycopene, which can help prevent sunburns. ¬†Quality sunscreens are important too–but why not boost your immunity through your diet as well?
